RAISINS, APPLE &
SCALLION SALAD

This sun-dried raisins, apple and scallion salad recipe is the perfect refreshing salad for summer. Apricot harvest season in Turkey starts from later September to mid-October. Our Sun-dried raisins add a sweet touch to this savory dish. can start with store-bought pie crust dough to speed things, up or make your own.


Ingredients
  • ½ cup Sun Tasty™ dried raisins
  • 2 crisp apples (such as Pink Lady or Honeycrisp), thinly sliced
  • 4 scallions, thinly sliced
  • ¼ cup fresh dill leaves
  • ¼ cup fresh lime juice
  • ½ tsp. crushed red pepper flakes Kosher salt and freshly ground black pepper
  • ½ cup grated provolone cheese or white cheddar
  • 2 Tbsp. extra-virgin olive oil
  • 1 cup very coarse, fresh breadcrumbs
DIRECTIONS

  • Combine the lime juice, olive oil, dill, salt, and pepper in a small bowl. Whisk in the oil (or shake all in a small jar.)
  • Combine the apples, scallions and Sun Tasty™ sun-dried raisins in a medium bowl and toss with half of the dressing. (You can make this part several hours ahead of time and refrigerate.) When ready to serve, toss in the grated cheese and breadcrumbs.
